6 Egg Whites (I use Egg Beaters Egg Whites)
1/4 cup diced onion
1/4 cup sliced mushrooms
1/4 cup red or green bell pepper
1/4 of a jalapeno, diced (optional)
Cayenne pepper, to taste
Crushed black pepper, to taste
Garlic powder, to taste
1. Lightly coat skillet with non-stick cooking spray.
2. Place skillet over medium heat.
3. Add egg whites.
4. Once lightly browned on the bottom, add veggies and spices.
5. Stir frequently until eggs and veggies are cooked evenly.
